Winter Melon Soup in a Winter Melon

1. Cut the top of the winter melon off and scoop out the seeds. Scoop out as much of the white flesh as you can with a spoon and cut into smaller chunks. If not serving in the melon, cut off the peel and cut the flesh into smaller chunks (about 1 1/2” big).
2. In a pot, combine the melon, mushrooms, ribs, water, salt and pepper. Bring to a simmer, uncovered, and continue to simmer until the melon is translucent and the ribs are very tender, about 45 mins. Skim the soup for impurities every so often. Finish by stirring in oyster sauce and green onions.
3. Transfer the soup back into the melon and serve!
