Pigs in Puffer / Mini Steamed Sausage Buns

After the first proof of your steamed bun dough, divide the dough into 12 equal portions. Roll each dough portion into a 10-inch long rope. Wrap the dough rope around a mini sausage (you can use Japanese pork sausages, hot dogs, or your favorite sausage, cut in half if large) and place it on a piece of parchment paper. Cover the wrapped buns and allow them to proof for 30 minutes. Prepare your steamer. Arrange the proofed buns in your bamboo steamer. Steam for 10 minutes. Take the steamers off the heat and wait 5 minutes before removing the lid. Allow the buns to cool slightly and then serve with mayonnaise or ketchup.
