Mei Fun Shrimp 🍤 the crispiest shrimp you’ll ever have. Mei Fun is dried thin rice noodles or rice vermicelli. You see it as a crispy coating in a lot of Cantonese food (those fried shrimp/seafood balls at Chinese banquets), the noodles instant puff up in the hot oil and it’s the best texture. In a medium bowl, toss to combine shrimp, flour, salt, and spices. In a small bowl, whisk the egg. In a medium bowl, add the broken up rice noodles. Dip the shrimp into the egg and then into the noodles to fully coat. Heat up oil in a large frying pan until hot (about 370 degrees or dip a pair of wooden chopsticks in the oil and see if tiny bubbles appear). Add a batch of shrimp and fry both sides until crispy and the shrimp is plump and pink, 60 to 90 seconds (for large shrimp, fry for less time if using smaller shrimp).
